New Chicken Gumbo Soup

Ingredients

2 tablespoons butter
1 whole onion, chopped fine
2 stalks celery, chopped fine
4 cups chicken broth
½ whole green pepper,chopped fine
2 cups, sliced okra
2 whole Garlic cloves, minced
1-1/2 cups canned tomatoes, with juice
1 pinch salt, to taste
1 pinch cayenne pepper, to taste
1 cup diced cooked chicken
1 cup cooked rice

Preparation

Melt the butter in a large soup pot, add the onion and celery, and cook, stirring, for about 5 minutes, until golden. Stir in the broth, green pepper, okra, garlic, and tomatoes. Bring to a boil, then simmer for about 30 minutes. Add salt to taste, the cayenne pepper, cooked chicken meat, and rice, and cook for 2 more minutes. Taste and adjust seasonings, as needed.
